Ingredients

  • 1 cup pistachio nuts
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1 cup dark chocolate, chopped
  • 1/2 cup milk

Instructions

  1. Soak the pistachio nuts in water for at least 4 hours, then drain and blend until smooth.
  2. In a bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, mix the pistachio paste, sugar, and vanilla extract.
  4. Gently fold the whipped cream into the pistachio mixture until well combined.
  5. Pour the mousse into serving glasses and refrigerate for at least 2 hours.
  6. For the ganache, heat the milk in a saucepan until just boiling, then pour it over the chopped chocolate and let it sit for a few minutes.
  7. Stir the chocolate until smooth and glossy, then let it cool slightly.
  8. Once the mousse is set, pour the chocolate ganache over the top and refrigerate again until ready to serve.

Notes

  • For a more intense pistachio flavor, use pistachio extract.
