- 4 salmon fillets
- 2 cups vegetable broth
- 1 cup white wine
- 1 lemon, sliced
- 1 tablespoon fresh dill
- 1 tablespoon fresh parsley
- 1 tablespoon fresh chives
- Salt and pepper to taste
Instructions
- In a large skillet, combine vegetable broth and white wine over medium heat.
- Add lemon slices and herbs to the skillet.
- Season the salmon fillets with salt and pepper.
- Carefully place the salmon fillets in the skillet.
- Cover and poach for about 10-12 minutes, or until the salmon is cooked through.
- Remove the salmon from the skillet and serve with the poaching liquid and herbs.
