  • ½ cup unsalted butter (melted and divided)
  • 1 large egg (at room temperature)
  • ½ cup mashed potatoes
  • 1 teaspoon salt
  • 3 ½ cups all-purpose flour

Instructions

  1. Proofing the yeast: Begin by adding the yeast, sugar, and warm milk to the bowl of your stand mixer. Allow this mixture to sit for about 5 minutes, letting it bubble and froth.
  2. Making the dough: Pour half of the melted butter and the egg into the yeast mixture. Beat on medium-high speed until well mixed. Add the mashed potatoes and combine until fully incorporated.
  3. Adding dry ingredients: Sprinkle in the salt. Gradually add the flour one cup at a time until a cohesive ball of dough forms.
  4. Kneading: Switch to the dough hook and knead for about 10 minutes, developing a smooth dough.
  5. First rise: Grease a mixing bowl and cover the dough, allowing it to rise for about 1 hour in a warm spot.
  6. Punch down and roll out: Turn out the dough onto a floured surface, punch it down, and slice it into 12 equal pieces.
  7. Rolling and second rise: Roll each piece into a ball and place them in a greased baking dish. Cover and let rise for 1 hour.
  8. Baking: Preheat your oven to 350°F and bake the rolls for about 30 minutes until golden brown.
  9. Butter brushing: Brush with the remaining melted butter immediately after removing from the oven.

Notes
