Description

Delicious pulled BBQ jackfruit sandwiches that are a perfect plant-based alternative to traditional pulled pork.


Ingredients

  • 2 cans young green jackfruit in water or brine, drained and rinsed
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Buns for serving
  • Coleslaw for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Stir to combine.
  5. Cook for about 10 minutes, stirring occasionally, until jackfruit is tender.
  6. Shred the jackfruit using two forks, mixing it with the onion and spices.
  7. Add BBQ sauce and stir well to coat the jackfruit.
  8. Cook for an additional 5 minutes until heated through.
  9. Serve on buns and top with coleslaw if desired.

Notes

  • For a spicier version, add cayenne pepper to taste.
  • Jackfruit can be found in most grocery stores or Asian markets.
