Delicious pulled BBQ jackfruit sandwiches that are a perfect plant-based alternative to traditional pulled pork.
Ingredients

- 2 cans young green jackfruit in water or brine, drained and rinsed
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Buns for serving
- Coleslaw for topping (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add the drained jackfruit, smoked paprika, cumin, salt, and pepper. Stir to combine.
- Cook for about 10 minutes, stirring occasionally, until jackfruit is tender.
- Shred the jackfruit using two forks, mixing it with the onion and spices.
- Add BBQ sauce and stir well to coat the jackfruit.
- Cook for an additional 5 minutes until heated through.
- Serve on buns and top with coleslaw if desired.
Notes
- For a spicier version, add cayenne pepper to taste.
- Jackfruit can be found in most grocery stores or Asian markets.
- Leftovers can be stored in the refrigerator for up to 3 days.
