- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, sugar, and vegetable oil.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking soda, baking powder, salt, and spices.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in the chopped nuts.
- Pour the batter into a greased loaf pan or baking dish.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
Notes
- Store leftovers in an airtight container for up to a week.
- This recipe can be made into muffins by adjusting the baking time to 20-25 minutes.
- Feel free to add chocolate chips or dried fruit for extra flavor.
