Ingredients

- 1 cup pumpkin puree
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the pumpkin puree, cream cheese, sugar, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
- In another bowl, mix the graham cracker crumbs with melted butter until well combined.
- Press the graham cracker mixture into the bottom of a lined muffin tin to form a crust.
- Pour the pumpkin cheesecake mixture over the crust in each muffin cup.
- Bake for 20-25 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
Notes
- These bites can be topped with whipped cream for extra flavor.
- Store leftovers in an airtight container in the refrigerator.
- For a spicier flavor, add more cinnamon or a pinch of cloves.
