Delicious bite-sized pumpkin cheesecake treats perfect for fall gatherings.


Ingredients

  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, cream cheese, sugar, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  3. In another bowl, mix the graham cracker crumbs with melted butter until well combined.
  4. Press the graham cracker mixture into the bottom of a lined muffin tin to form a crust.
  5. Pour the pumpkin cheesecake mixture over the crust in each muffin cup.
  6. Bake for 20-25 minutes or until the center is set.
  7. Allow to cool, then refrigerate for at least 2 hours before serving.

Notes

  • These bites can be topped with whipped cream for extra flavor.
  • Store leftovers in an airtight container in the refrigerator.
  • For a spicier flavor, add more cinnamon or a pinch of cloves.
