Delicious and nutritious pumpkin cheesecake energy balls that make for a perfect snack.
Ingredients

- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup cream cheese, softened
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 cup chopped nuts (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- In a large bowl, combine the rolled oats, pumpkin puree, cream cheese, honey or maple syrup, vanilla extract, and pumpkin pie spice.
- Mix until all ingredients are well combined.
- If desired, fold in chopped nuts and chocolate chips.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to adjust the sweetness by adding more or less honey/maple syrup.
- These energy balls can be frozen for longer storage.
- For a vegan version, substitute cream cheese with a plant-based alternative.
