Description

Delicious and nutritious pumpkin cheesecake energy balls that make for a perfect snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup cream cheese, softened
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large bowl, combine the rolled oats, pumpkin puree, cream cheese, honey or maple syrup, vanilla extract, and pumpkin pie spice.
  2. Mix until all ingredients are well combined.
  3. If desired, fold in chopped nuts and chocolate chips.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.

Notes

  • Feel free to adjust the sweetness by adding more or less honey/maple syrup.
  • These energy balls can be frozen for longer storage.
  • For a vegan version, substitute cream cheese with a plant-based alternative.
