Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup sugar (for coating)
  • 1 cup caramel sauce (for dipping)

Instructions

  1. In a saucepan, combine water and butter; bring to a boil.
  2. Stir in flour, pumpkin puree, cinnamon, nutmeg, and salt until a dough forms.
  3. Remove from heat and let cool slightly.
  4. Beat in eggs one at a time until smooth.
  5. Heat oil in a deep fryer or large pot to 375°F (190°C).
  6. Transfer dough to a piping bag fitted with a star tip.
  7. Pipe 4-6 inch strips into hot oil, cutting with scissors.
  8. Fry until golden brown, about 2-3 minutes per side.
  9. Remove and drain on paper towels, then roll in sugar.
  10. Serve warm with caramel sauce for dipping.
