Ingredients

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 (8 oz) package cream cheese, softened
  • 2 large eggs
  • 1 cup powdered sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix until well combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In another bowl, beat the cream cheese until smooth. Add the eggs, powdered sugar, pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until well combined.
  5. Pour the pumpkin mixture over the cake layer in the baking dish.
  6. Bake for 40-50 minutes, or until the edges are set and the center is slightly gooey.
  7. Allow to cool before serving. Dust with powdered sugar if desired.
