- 1 box yellow cake mix
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 (8 oz) package cream cheese, softened
- 2 large eggs
- 1 cup powdered sugar
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix until well combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In another bowl, beat the cream cheese until smooth. Add the eggs, powdered sugar, pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until well combined.
- Pour the pumpkin mixture over the cake layer in the baking dish.
- Bake for 40-50 minutes, or until the edges are set and the center is slightly gooey.
- Allow to cool before serving. Dust with powdered sugar if desired.
Notes
- For a stronger pumpkin flavor, add more pumpkin puree.
- Serve warm or chilled, with whipped cream or ice cream.
- Store leftovers in the refrigerator for up to 3 days.
