Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugars, baking powder, baking soda, salt, and spices.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting.

Notes

  • For a festive touch, consider adding orange and black sprinkles on top of the frosting.
