Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, pumpkin puree, milk, maple syrup, brown sugar, vanilla extract, pumpkin pie spice, baking powder, and salt.
- Mix until well combined.
- If using, fold in the chopped nuts.
- Grease a muffin tin and fill each cup with the oatmeal mixture.
- Bake for 20-25 minutes or until the tops are golden brown.
- Allow to cool before removing from the muffin tin.
