Description

Ingredients

  • 2 cups pumpkin puree
  • 1 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/4 cup fresh sage leaves

Instructions

  1. In a bowl, mix pumpkin puree, egg, salt, nutmeg, and Parmesan cheese until well combined.
  2. Gradually add flour until a soft dough forms.
  3. On a floured surface, roll the dough into ropes and cut into small pieces to form gnocchi.
  4. Boil a pot of salted water and cook the gnocchi until they float to the surface.
  5. In a skillet, melt butter and add sage leaves, cooking until crispy.
  6. Drain the gnocchi and toss them in the skillet with the sage butter.
  7. Serve warm, garnished with additional Parmesan if desired.

Notes
