Rainbow Unicorn Refresher

  • Author: Jessica
  • Total Time: 10 minutes

Ingredients

Scale

To create the Rainbow Unicorn Refresher, you’ll need a medley of vibrant, fresh ingredients that deliver both flavor and color:

  • 1/2 cup fresh pineapple juice (for bright yellow tones and tropical sweetness)

  • 1/2 cup fresh orange juice (for citrus tang and orange color)

  • 1/4 cup fresh lime juice (adds zesty brightness and green hues)

  • 1/4 cup cranberry juice (for deep pink/red layers)

  • 1/4 cup blue curaçao syrup (non-alcoholic version available for a bright blue hue)

  • 1/4 cup sparkling water or club soda (adds fizz and lightness)

  • 12 teaspoons edible glitter or shimmer dust (optional, for magical sparkle)

  • Fresh mint leaves (for garnish and herbal aroma)

  • Ice cubes (preferably clear or shaped for visual effect)

  • Optional alcohol: 1-2 oz vodka, white rum, or gin (depending on preference)

  • Optional simple syrup or honey (to adjust sweetness)

Note: Adjust quantities depending on how many servings you want to prepare

Instructions

Step 1: Prepare Your Ingredients and Glassware

Begin by gathering all your juices and syrups. Fresh juices work best for authentic taste and vibrant colors. Chill them beforehand for a colder drink. Select tall, clear glasses to showcase the beautiful layers of your refresher. Also, have your ice ready.

Step 2: Layer the Yellow Base

Pour pineapple juice into the glass until it reaches about one-third of the way. Add ice gently to keep the juice cool and to create separation for the layers.

Step 3: Add the Orange Layer

Slowly pour fresh orange juice over the back of a spoon held just above the pineapple juice layer. This technique helps the juice float without mixing, preserving the distinct color layers.

Step 4: Create the Green-Lime Layer

Repeat the spoon method to layer lime juice next. You can dilute it slightly with sparkling water for fizz and to lessen acidity, adjusting flavor as desired.

Step 5: Add the Pink and Blue Layers

Pour cranberry juice next, again gently layering it. Then, carefully add blue curaçao syrup or the non-alcoholic version. If you are adding alcohol, mix it with the blue layer for a subtle effect.

Step 6: Top Off with Sparkling Water and Glitter

Add sparkling water or club soda to the top to give the drink a refreshing fizz. Sprinkle edible glitter or shimmer dust for that magical, unicorn sparkle effect.

Step 7: Garnish and Serve

Add fresh mint leaves or even an edible flower to enhance aroma and presentation. Serve immediately with a straw or swizzle stick.

Notes

  • The key to the layered effect lies in the density differences of each liquid. Heavier juices should be poured first, lighter ones slowly layered on top.

  • Use the back of a spoon technique to prevent colors from mixing and to maintain distinct layers.

  • If layering proves tricky, gently stir after pouring for a more blended but still colorful effect.

  • Adjust sweetness by adding simple syrup or honey to each juice before layering if desired.
