    • 1 tablespoon coconut oil, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt to form the crust mixture.
  3. Press the crust mixture evenly into the bottom of a greased 8×8 inch baking dish.
  4. Bake the crust for 10-12 minutes or until lightly golden.
  5. In a saucepan over medium heat, combine raspberries, honey, cornstarch, and lemon juice. Cook until the mixture thickens, about 5-7 minutes.
  6. Pour the raspberry filling over the baked crust and spread evenly.
  7. In a separate bowl, mix shredded coconut, coconut sugar, and melted coconut oil. Sprinkle this mixture over the raspberry layer.
  8. Bake for an additional 15-20 minutes until the coconut topping is golden brown.
  9. Allow to cool completely before cutting into bars.
