Ingredients
- Fresh Raspberries: 1 cup, washed and stems removed
- Coconut Cream: 1 cup, chilled

- Rum: 1/2 cup, white or coconut rum
- Ice: 2 cups, crushed
- Mint Leaves: for garnish
Instructions
- In a blender, combine the fresh raspberries, coconut cream, pineapple juice, and rum.
- Add the crushed ice to the blender and blend on high until smooth and creamy, about 30-45 seconds.
- Check the consistency; if too thick, add a splash more pineapple juice and blend again.
- Pour the mixture into chilled glasses, filling them about three-quarters full.
- Garnish with fresh mint leaves and a few whole raspberries on top.
