Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh raspberries
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and softened butter to form a crust.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake the crust for 15 minutes until lightly golden.
  5. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and salt.
  6. Gently fold in the raspberries.
  7. Pour the lemon-raspberry mixture over the baked crust.
  8. Bake for an additional 20-25 minutes until set.
  9. Allow to cool before cutting into squares.
