Description

Delicious muffins bursting with the flavor of cranberries and a hint of orange zest, made creamy with ricotta cheese.


Ingredients

  • 1 cup ricotta cheese
  • 1 cup fresh cranberries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, combine ricotta cheese, sugar, egg, orange juice, melted butter, and vanilla extract. Whisk until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and orange zest.
  4. Gradually fold the dry mixture into the wet mixture, mixing just until combined.
  5. Gently fold in the cranberries.
  6. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes in the pan before transferring to a wire rack.

Notes

These muffins can be frozen for up to 3 months. For variations, consider adding nuts or chocolate chips.
