- 1 cup ricotta cheese
- 1 cup fresh cranberries
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup orange juice
- 1 tablespoon orange zest
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, combine ricotta cheese, sugar, egg, orange juice, melted butter, and vanilla extract. Whisk until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and orange zest.
- Gradually fold the dry mixture into the wet mixture, mixing just until combined.
- Gently fold in the cranberries.
- Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack.
Notes
These muffins can be frozen for up to 3 months. For variations, consider adding nuts or chocolate chips.
