Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the beef loin.
  3. Place the beef loin on a roasting rack in a baking dish.
  4. In another bowl, combine halved baby potatoes with melted butter, minced garlic, paprika, salt, and pepper. Toss until evenly coated.
  5. Arrange the garlic potatoes around the beef loin in the baking dish.
  6. Roast in the preheated oven for 45-55 minutes, or until the internal temperature of the beef reaches 135°F (57°C) for medium-rare.
  7. Remove from the oven and let the beef rest for 10-15 minutes before slicing.
  8. Serve the sliced beef loin with the roasted garlic potatoes on the side.
