Ingredients

- 2 cups of mixed root vegetables (carrots, sweet potatoes, beets)
- 1 cup of quinoa
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1/2 teaspoon of paprika
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the root vegetables into bite-sized pieces.
- In a bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and paprika.
- Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until tender and golden.
- Meanwhile, cook the quinoa according to package instructions.
- Once the vegetables are done, combine them with the cooked quinoa in a large bowl.
- Garnish with fresh herbs if desired and serve warm.
