Ingredients

  • 4 ripe tomatoes, halved
  • 2 ripe peaches, pitted and diced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved tomatoes on a baking sheet and drizzle with olive oil, salt, and pepper.
  3. Roast the tomatoes in the oven for 20-25 minutes until they are soft and slightly charred.
  4. Remove the tomatoes from the oven and let them cool slightly.
  5. In a mixing bowl, combine the roasted tomatoes, diced peaches, red onion, garlic, jalapeño, and cilantro.
  6. Add lime juice and mix well. Season with additional salt and pepper to taste.
  7. Serve immediately or refrigerate for an hour to let the flavors meld.

  • For a spicier salsa, leave some seeds in the jalapeño.
