Ingredients

- 4 ripe tomatoes, halved
- 2 ripe peaches, pitted and diced
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved tomatoes on a baking sheet and drizzle with olive oil, salt, and pepper.
- Roast the tomatoes in the oven for 20-25 minutes until they are soft and slightly charred.
- Remove the tomatoes from the oven and let them cool slightly.
- In a mixing bowl, combine the roasted tomatoes, diced peaches, red onion, garlic, jalapeño, and cilantro.
- Add lime juice and mix well. Season with additional salt and pepper to taste.
- Serve immediately or refrigerate for an hour to let the flavors meld.
Notes
- For a spicier salsa, leave some seeds in the jalapeño.
- This salsa pairs well with grilled meats and tortilla chips.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
