- 1 cup quinoa
- 2 cups vegetable broth
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water and drain.
- In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- While the quinoa cooks, toss the diced zucchini, bell pepper, cherry tomatoes, and red onion with olive oil, salt, and pepper on a baking sheet.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
- Once the quinoa is cooked, fluff it with a fork and divide it into bowls.
- Top the quinoa with the roasted vegetables and garnish with fresh parsley.
- Serve warm and enjoy!
