Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 2 tbsp fresh herbs (parsley, thyme, or rosemary), chopped

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix well and form into meatballs.
  2. In a skillet, brown the meatballs on all sides over medium heat. Remove and set aside.
  3. In the same skillet, add beef broth and bring to a simmer. Return meatballs to the skillet.
  4. Cover and cook for 20 minutes, or until meatballs are cooked through.
  5. In a separate pot, boil potatoes until tender. Drain and return to pot.
  6. Add milk, butter, and herbs to the potatoes. Mash until smooth and creamy.
  7. In a small bowl, mix cornstarch and water to create a slurry. Stir into the skillet with meatballs to thicken the sauce.
  8. Serve meatballs over garlic herb mashed potatoes.

Notes

  • For a richer flavor, use beef broth instead of water for the mashed potatoes.
  • Feel free to add your favorite vegetables as a side dish.
