- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1 egg
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 2 tbsp cornstarch
- 2 tbsp water
- 2 lbs potatoes, peeled and cubed
- 1/2 cup milk
- 4 tbsp butter
- 2 tbsp fresh herbs (parsley, thyme, or rosemary), chopped
Instructions
- In a large bowl, combine ground beef, breadcrumbs, onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix well and form into meatballs.
- In a skillet, brown the meatballs on all sides over medium heat. Remove and set aside.
- In the same skillet, add beef broth and bring to a simmer. Return meatballs to the skillet.
- Cover and cook for 20 minutes, or until meatballs are cooked through.
- In a separate pot, boil potatoes until tender. Drain and return to pot.
- Add milk, butter, and herbs to the potatoes. Mash until smooth and creamy.
- In a small bowl, mix cornstarch and water to create a slurry. Stir into the skillet with meatballs to thicken the sauce.
- Serve meatballs over garlic herb mashed potatoes.
Notes
- For a richer flavor, use beef broth instead of water for the mashed potatoes.
- Feel free to add your favorite vegetables as a side dish.
- Leftovers can be stored in the refrigerator for up to 3 days.
