Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup salted caramel sauce
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your 9-inch round cake pans by greasing them well.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a mixing bowl until evenly combined.
  3. Beat together the eggs, granulated sugar, and brown sugar in a large bowl using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the dry ingredients to the wet mixture, stirring gently until just combined, being careful not to overmix.
  5. Fold in the grated carrots and salted caramel sauce until evenly distributed throughout the batter.
  6. Divide the batter between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for about 10 minutes, then transfer them onto a wire rack to cool completely.
  8. Beat together the cream cheese and butter for the frosting until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until fluffy.
  9. Spread a layer of frosting between the cake layers and on the top and sides once the cakes are completely cooled. Drizzle extra salted caramel over the top.
  10. Slice into your creation and serve.

Notes

For a richer flavor, bake the cakes a day in advance and frost when ready to serve.
