- 1 teaspoon baking powder

- 1 cup brown sugar
- 1 cup vegetable oil
- 2 cups grated carrots
- 1 cup salted caramel sauce
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Prepare your 9-inch round cake pans by greasing them well.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a mixing bowl until evenly combined.
- Beat together the eggs, granulated sugar, and brown sugar in a large bowl using an electric mixer until light and fluffy, about 3-4 minutes.
- Add the dry ingredients to the wet mixture, stirring gently until just combined, being careful not to overmix.
- Fold in the grated carrots and salted caramel sauce until evenly distributed throughout the batter.
- Divide the batter between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer them onto a wire rack to cool completely.
- Beat together the cream cheese and butter for the frosting until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until fluffy.
- Spread a layer of frosting between the cake layers and on the top and sides once the cakes are completely cooled. Drizzle extra salted caramel over the top.
- Slice into your creation and serve.

For a richer flavor, bake the cakes a day in advance and frost when ready to serve.
