Sausage Stuffed Sweet Mini Peppers are a delightful combination of juicy, savory sausage and the natural sweetness of vibrant mini peppers. Each bite offers a satisfying crunch followed by a burst of flavor, making them an irresistible appetizer for any gathering.

Ingredients

Scale
  • For the Filling:
    • 1 pound Italian sausage, casings removed
    • 1 cup cream cheese, softened
    • 1/2 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon black pepper
  • For the Peppers:
    • 12 sweet mini peppers, halved and seeds removed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the Italian sausage until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Once cooked, drain excess fat and let it cool slightly.
  4. In a mixing bowl, combine the cooked sausage, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, and black pepper until well blended.
  5. Stuff each mini pepper half with the sausage mixture, pressing down gently to pack it in.
  6. Arrange the stuffed peppers on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the filling is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Make-ahead: You can prepare the filling a day in advance and store it in the refrigerator. Stuff the peppers just before baking.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Substitutions: Use turkey sausage for a leaner option or swap cream cheese for a dairy-free alternative.
