Ingredients
Scale
- For the Pastry:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup unsalted butter, chilled and cubed
- 6–8 tablespoons ice water
- For the Filling:
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- For the Egg Wash:
- 1 egg, beaten
- 1 tablespoon milk
Instructions
- In a large bowl, combine flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in ice water, one tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for 30 minutes.
- In a skillet, scramble the eggs over medium heat until just set. Stir in cheese, bacon, green onions, pepper, and garlic powder. Remove from heat.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into rectangles (about 4×6 inches).
- Place a tablespoon of filling on half of each rectangle, leaving a border. Fold the other half over and seal the edges with a fork.
- Brush the tops with the egg wash and cut a few slits for steam to escape.
- Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
Notes
- Make-ahead: The pastry can be prepared and frozen before baking. Thaw in the refrigerator overnight before baking.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Substitutions: Use different cheeses like mozzarella or feta, or swap bacon for sausage or vegetables for a vegetarian option.
