- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tsp cumin
- 1 tsp chili powder
- 1 tbsp olive oil
- Salt to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onions and bell peppers, stirring frequently until they turn soft and fragrant—about 5 minutes.
- Add the drained black beans, cumin, chili powder, and a pinch of salt. Continue to cook for an additional 5 minutes.
- Warm your tortillas in a dry skillet or microwave for a few seconds until pliable.
- Spoon a generous amount of the bean mixture onto the center of each tortilla. Sprinkle shredded cheese, salsa, and sour cream over the top.
- Fold the sides of the tortilla inward, then roll it tightly from the bottom up.
- Serve warm with extra salsa or sour cream as desired.
Notes
Feel free to customize with lentils instead of beans or whole wheat tortillas for a healthier option.
