Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Cooked rice or quinoa for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix sesame oil, soy sauce, ginger, and garlic.
  3. Toss the cubed tofu in the marinade and let it sit for 15 minutes.
  4. Spread the marinated tofu on a baking sheet and bake for 25-30 minutes until golden and crispy.
  5. In a pan, sauté broccoli, bell pepper, and carrot until tender.
  6. Serve the crispy tofu over rice or quinoa, topped with sautéed vegetables, green onions, and sesame seeds.

Notes

  • For extra flavor, marinate the tofu overnight.
