- 8 oz soba noodles
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp ginger, grated
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 2 green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Cook the soba noodles according to package instructions. Drain and rinse under cold water.
- In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger.
- Add the cooked soba noodles to the bowl and toss to coat in the sauce.
- Mix in the shredded carrots, sliced bell peppers, and green onions.
- Sprinkle with sesame seeds before serving.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- This dish can be served warm or cold.
