Ingredients

  • 1 tsp ginger, grated

  • 1 cup sliced bell peppers
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger.
  3. Add the cooked soba noodles to the bowl and toss to coat in the sauce.
  4. Mix in the shredded carrots, sliced bell peppers, and green onions.
  5. Sprinkle with sesame seeds before serving.
