Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole wheat pitas
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup Greek yogurt
  • 2 tablespoons ranch seasoning
  • Fresh herbs (parsley, dill) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chicken strips with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the chicken on a sheet pan and bake for 20-25 minutes until cooked through.
  4. In another bowl, mix the shredded cabbage, carrots, Greek yogurt, and ranch seasoning to make the slaw.
  5. Warm the pitas in the oven for a few minutes.
  6. Assemble the pitas by adding the chicken and topping with herby ranch slaw.
  7. Garnish with fresh herbs and serve immediately.
