A delicious and easy-to-make meal featuring seasoned chicken and fresh herby ranch slaw, all served in warm pitas.

- 1 lb chicken breast, cut into strips
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 whole wheat pitas
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 cup Greek yogurt
- 2 tablespoons ranch seasoning
- Fresh herbs (parsley, dill) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chicken strips with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the chicken on a sheet pan and bake for 20-25 minutes until cooked through.
- In another bowl, mix the shredded cabbage, carrots, Greek yogurt, and ranch seasoning to make the slaw.
- Warm the pitas in the oven for a few minutes.
- Assemble the pitas by adding the chicken and topping with herby ranch slaw.
- Garnish with fresh herbs and serve immediately.
Notes
- Feel free to add other vegetables to the slaw, such as bell peppers or radishes.
- This recipe can be made ahead of time; just store the chicken and slaw separately.
- For a spicier kick, add some hot sauce to the chicken marinade.
