- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 cup cherry tomatoes
- 1 zucchini, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper.
- Place the chicken breasts on a sheet pan and brush them with the garlic herb mixture.
- Add the vegetables around the chicken on the sheet pan.
- Drizzle the remaining olive oil mixture over the vegetables and toss to coat.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Let it rest for a few minutes before serving.
