Description

Ingredients

  • Shrimp: 1 pound, peeled and deveined
  • Cheese: 2 cups shredded Monterey Jack cheese
  • Tortillas: 4 large flour tortillas
  • Vegetables: 1/2 cup diced bell peppers, 1/2 cup diced onions
  • Seasonings: 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon paprika, salt and pepper to taste
  • Fresh Ingredients: 1/4 cup chopped fresh cilantro, juice of 1 lime
  • Oil: 2 tablespoons olive oil for cooking

Instructions

  1. In a bowl, combine shrimp, garlic powder, cumin, paprika, salt, and pepper. Marinate for 15 minutes.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the shrimp and cook for 3-4 minutes until pink and opaque.
  3. Add diced bell peppers and onions to the skillet and sauté for an additional 2-3 minutes until softened.
  4. Remove the shrimp mixture from the skillet and set aside. Wipe the skillet clean.
  5. Place a tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  6. Layer the shrimp mixture on top of the cheese, then sprinkle the remaining cheese over the shrimp.
  7. Fold the tortilla over and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  8. Repeat with the remaining tortillas and filling. Serve hot with lime wedges and extra cilantro.
