Ingredients
- Beef Roast: 3-4 pounds of chuck roast, trimmed
- Cranberry Balsamic Glaze: 1 cup cranberry juice, 1/2 cup balsamic vinegar, 1/4 cup brown sugar, 1 tablespoon Dijon mustard
- Vegetables: 2 medium onions, chopped; 4 cloves garlic, minced; 3 carrots, sliced; 2 stalks celery, chopped
- Herbs: 2 sprigs fresh rosemary, 2 sprigs fresh thyme, salt and pepper to taste
- Broth: 2 cups beef broth
Instructions
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side.
- Remove the roast and set aside. In the same pot, add onions, garlic, carrots, and celery, sautéing until softened, about 5-7 minutes.
- Return the roast to the pot, then add the cranberry juice, balsamic vinegar, brown sugar, Dijon mustard, beef broth, and herbs. Bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Braise for 3-4 hours, or until the beef is fork-tender.
- Once done, remove the roast and let it rest for 15 minutes before slicing. Meanwhile, reduce the cooking liquid on the stovetop for a thicker glaze.
