Ingredients
- Beef Roast: 3-4 pounds of chuck roast, trimmed
- Seasoning: 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder
- Cranberry Balsamic Glaze: 1 cup cranberry juice, 1/2 cup balsamic vinegar, 1/4 cup brown sugar, 1 tablespoon Dijon mustard
- Vegetables: 2 medium onions, chopped; 3 carrots, sliced; 3 celery stalks, chopped
- Broth: 2 cups beef broth
- Herbs: 2 sprigs fresh rosemary, 2 sprigs fresh thyme
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast with salt, pepper, and garlic powder, ensuring an even coating.
- In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Remove the roast and set aside. In the same pot, add onions, carrots, and celery, sautéing until softened, about 5-7 minutes.
- Pour in the cranberry juice, balsamic vinegar, brown sugar, and Dijon mustard, stirring to combine.
- Add the beef broth and return the roast to the pot. Nestle the rosemary and thyme around the meat.
- Cover the pot and transfer it to the preheated oven. Braise for 3-4 hours, or until the meat is fork-tender.
- Once done, remove the roast and let it rest for 15 minutes before slicing. Serve with the glaze drizzled over the top.
Notes
- This dish can be made a day in advance; the flavors deepen overnight.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a sweeter glaze, increase the brown sugar to 1/3 cup.
- Substitute the beef roast with pork shoulder for a different flavor profile.
