Description

This Slow-Braised Beef Roast is a succulent masterpiece, featuring tender, melt-in-your-mouth meat enveloped in a rich, tangy cranberry balsamic glaze. The deep, savory flavors are perfectly balanced with a hint of sweetness, creating a luxurious dining experience that tantalizes the taste buds.

Ingredients

  • Beef Roast: 3-4 pounds of chuck roast, trimmed
  • Seasoning: 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder
  • Cranberry Balsamic Glaze: 1 cup cranberry juice, 1/2 cup balsamic vinegar, 1/4 cup brown sugar, 1 tablespoon Dijon mustard
  • Vegetables: 2 medium onions, chopped; 3 carrots, sliced; 3 celery stalks, chopped
  • Broth: 2 cups beef broth
  • Herbs: 2 sprigs fresh rosemary, 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt, pepper, and garlic powder, ensuring an even coating.
  3. In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
  4. Remove the roast and set aside. In the same pot, add onions, carrots, and celery, sautéing until softened, about 5-7 minutes.
  5. Pour in the cranberry juice, balsamic vinegar, brown sugar, and Dijon mustard, stirring to combine.
  6. Add the beef broth and return the roast to the pot. Nestle the rosemary and thyme around the meat.
  7. Cover the pot and transfer it to the preheated oven. Braise for 3-4 hours, or until the meat is fork-tender.
  8. Once done, remove the roast and let it rest for 15 minutes before slicing. Serve with the glaze drizzled over the top.

Notes

  • This dish can be made a day in advance; the flavors deepen overnight.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a sweeter glaze, increase the brown sugar to 1/3 cup.
  • Substitute the beef roast with pork shoulder for a different flavor profile.
