Ingredients
- Lamb Shanks: 4 pieces, about 1.5 pounds each

- Red Wine: 1 cup, preferably dry

Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides, about 4-5 minutes per side, until golden brown.
- Remove the shanks and place them in the slow cooker.
- In the same skillet, add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.
- Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
- Add the beef broth, tomato paste, rosemary, thyme, salt, and pepper to the skillet. Stir to combine.
- Pour the mixture over the lamb shanks in the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender and easily pulls away from the bone.
- Serve hot, garnished with fresh herbs if desired.
