Ingredients

  • Lamb Shanks: 4 pieces, about 1.5 pounds each

  • Celery: 2 stalks, chopped
  • Red Wine: 1 cup, preferably dry

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides, about 4-5 minutes per side, until golden brown.
  2. Remove the shanks and place them in the slow cooker.
  3. In the same skillet, add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
  5. Add the beef broth, tomato paste, rosemary, thyme, salt, and pepper to the skillet. Stir to combine.
  6. Pour the mixture over the lamb shanks in the slow cooker.
  7. Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender and easily pulls away from the bone.
  8. Serve hot, garnished with fresh herbs if desired.
