Description

A delicious and easy recipe for slow cooker pulled pork served with a refreshing apple slaw.


Ingredients

  • 34 lbs pork shoulder
  • 1 cup barbecue sauce
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 apples, julienned
  • 1 cup cabbage, shredded
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Place the pork shoulder in the slow cooker.
  2. In a bowl, mix barbecue sauce, onion, garlic, smoked paprika, cumin, salt, and pepper. Pour over the pork.
  3. Cover and cook on low for 8 hours or until the pork is tender.
  4. Remove the pork and shred it with two forks.
  5. In a separate bowl, combine apples, cabbage, mayonnaise, apple cider vinegar, honey, salt, and pepper to make the slaw.
  6. Serve the pulled pork on buns topped with apple slaw.

Notes

  • For extra flavor, marinate the pork overnight with the spices.
  • Adjust the sweetness of the slaw by adding more or less honey.
  • Serve with pickles for added crunch.
