Ingredients

Scale
  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 1.5 lbs)
    • 2 tablespoons smoked paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
    • 2 tablespoons olive oil
  • For the Blackberry Jalapeño Melt:
    • 1 cup fresh blackberries
    • 1 jalapeño, finely chopped
    • 1 tablespoon honey
    • 1 cup shredded pepper jack cheese
    • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture evenly over the chicken breasts.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  5. Add the chicken breasts and sear for 5-7 minutes on each side until golden brown.
  6. While the chicken is cooking, in a separate bowl, combine blackberries, jalapeño, honey, and lime juice.
  7. Once the chicken is seared, spoon the blackberry jalapeño mixture over the chicken and sprinkle with shredded cheese.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
