Ingredients

Scale
  • For the Gingerbread Base:
    • 2 1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 tablespoon ground ginger
    • 1 tablespoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon salt
    • 3/4 cup unsalted butter, softened
    • 1 cup brown sugar, packed
    • 1/2 cup molasses
    • 1 large egg
  • For the Smores Layer:
    • 1 1/2 cups semi-sweet chocolate chips
    • 2 cups mini marshmallows
    • 1/2 cup crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate large bowl, cream the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add the molasses and egg to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread half of the gingerbread dough evenly in the prepared baking pan.
  7. Sprinkle the chocolate chips over the dough, followed by the mini marshmallows and crushed graham crackers.
  8. Top with the remaining gingerbread dough, spreading it gently to cover the filling.
  9. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  10. Let cool for at least 15 minutes before slicing into bars.
