    • 2 cups all-purpose flour

    • 1 cup sourdough discard (unfed)
    • 1/2 cup unsalted butter, cold and cubed
    • 1/4 cup milk (or buttermilk)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the sourdough discard and milk until just combined; do not overmix.
  5. Turn the dough out onto a floured surface and gently knead it 3-4 times until it comes together.
  6. Roll out the dough to about 1-inch thickness and cut out biscuits using a round cutter.
  7. Place the biscuits on a baking sheet lined with parchment paper, ensuring they are touching for soft sides.
  8. Bake for 12-15 minutes or until golden brown on top.
