- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1/4 cup honey
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, vegetable oil, eggs, and honey.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the melted butter until well incorporated.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before serving with additional honey butter.
Notes
- For a sweeter flavor, add more honey to the batter.
- These poppers can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
