Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked quinoa, black beans, corn, bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for later use.
