Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup farro
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, until golden brown.
  4. Meanwhile, cook the farro according to package instructions.
  5. In a large bowl, combine the roasted cauliflower, cooked farro, parsley, and lemon juice.
  6. Toss gently to combine and top with feta cheese if desired.
  7. Serve warm or at room temperature.

  • For a vegan option, omit the feta cheese.
