Ingredients

- 1 head of cauliflower, cut into florets
- 1 cup farro
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes, until golden brown.
- Meanwhile, cook the farro according to package instructions.
- In a large bowl, combine the roasted cauliflower, cooked farro, parsley, and lemon juice.
- Toss gently to combine and top with feta cheese if desired.
- Serve warm or at room temperature.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other vegetables like bell peppers or carrots.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
