Ingredients

- 2 cups green split peas
- 1 meaty ham bone
- 2 carrots, diced
- 1 onion, diced
- 2 potatoes, diced
- 8 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water to remove any debris.
- Combine the rinsed split peas, ham bone, diced carrots, onion, potatoes, and broth in a large pot.
- Bring to a boil over medium-high heat.
- Reduce heat to a gentle simmer and cover the pot. Let it cook for 60 to 90 minutes, stirring occasionally.
- Remove the ham bone, shred any meat from it, and stir it back into the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with freshly chopped herbs if desired.
Notes
For a vegetarian version, skip the ham and use smoked paprika. This soup can be made ahead and tastes even better the next day!
