Description

A comforting and hearty split pea soup with smoky ham and vibrant vegetables, perfect for cold days.


Ingredients

Scale
  • 2 cups green split peas
  • 1 meaty ham bone
  • 2 carrots, diced
  • 1 onion, diced
  • 2 potatoes, diced
  • 8 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water to remove any debris.
  2. Combine the rinsed split peas, ham bone, diced carrots, onion, potatoes, and broth in a large pot.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to a gentle simmer and cover the pot. Let it cook for 60 to 90 minutes, stirring occasionally.
  5. Remove the ham bone, shred any meat from it, and stir it back into the pot.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly chopped herbs if desired.

Notes

For a vegetarian version, skip the ham and use smoked paprika. This soup can be made ahead and tastes even better the next day!
