Ingredients

  • 4 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced red onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a bowl, mix the shredded chicken with BBQ sauce, diced red onion, salt, and pepper.
  4. Fill each zucchini boat with the BBQ chicken mixture.
  5. Top with shredded cheese.
  6. Drizzle olive oil over the filled zucchini boats.
  7. Place the boats on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender.
  8. Remove from the oven and let cool slightly before serving.
