Ingredients

- 4 medium zucchinis
- 2 cups cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced red onion
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center to create boats.
- In a bowl, mix the shredded chicken with BBQ sauce, diced red onion, salt, and pepper.
- Fill each zucchini boat with the BBQ chicken mixture.
- Top with shredded cheese.
- Drizzle olive oil over the filled zucchini boats.
- Place the boats on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender.
- Remove from the oven and let cool slightly before serving.
Notes
- Feel free to use any leftover chicken for this recipe.
- Adjust the amount of BBQ sauce according to your taste.
- For a spicier kick, add jalapeños to the chicken mixture.
