- 4 medium zucchini
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 1 cup shredded cheese (Cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil
- Optional toppings: green onions, cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchini in half lengthwise and scoop out the seeds to create boats.
- Drizzle each zucchini half with olive oil and season with salt and pepper.
- In a bowl, mix shredded chicken with BBQ sauce until well coated.
- Fill each zucchini boat with the BBQ chicken mixture.
- Sprinkle cheese over each filled zucchini boat.
- Place on a baking sheet and bake for 20-25 minutes until the zucchini is tender and cheese is melted.
- Remove from oven and top with optional toppings before serving.
Notes
You can prepare these zucchini boats ahead of time and store them in the fridge covered with foil for up to 24 hours. For a faster cooking method, consider using an air fryer.
