  • Author: Jessica
  • Total Time: 1 hour 10 minutes
  • Yield: Approximately 4 cups 1x
  • Diet: Vegetarian

Description

Strawberry Balsamic Preserves are a delightful combination of sweet strawberries and tangy balsamic vinegar, perfect for spreading on toast or pairing with cheese.

Ingredients

Scale
  • 2 pounds fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/2 cup balsamic vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine the sliced strawberries and sugar. Let sit for about 30 minutes to allow the strawberries to release their juices.
  2. Transfer the strawberry mixture to a large saucepan and add balsamic vinegar, lemon juice, and vanilla extract.
  3. Bring the mixture to a boil over medium heat, stirring frequently.
  4. Reduce the heat and let it simmer for about 30-40 minutes, or until the mixture thickens to your desired consistency.
  5. Remove from heat and let cool slightly before transferring to sterilized jars.
  6. Seal the jars and let them cool completely before storing in the refrigerator.

Notes

  • For a smoother texture, you can blend the mixture before canning.
  • This preserve pairs well with cheese, especially goat cheese.
  • Store in the refrigerator for up to 3 months.
