- 2 pounds fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1/2 cup balsamic vinegar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, combine the sliced strawberries and sugar. Let sit for about 30 minutes to allow the strawberries to release their juices.
- Transfer the strawberry mixture to a large saucepan and add balsamic vinegar, lemon juice, and vanilla extract.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Reduce the heat and let it simmer for about 30-40 minutes, or until the mixture thickens to your desired consistency.
- Remove from heat and let cool slightly before transferring to sterilized jars.
- Seal the jars and let them cool completely before storing in the refrigerator.

- For a smoother texture, you can blend the mixture before canning.
