Instructions
Step 1:
Wash and hull your strawberries. Pat them dry and place them in a blender. If they’re not peak-season sweet, add 1–2 teaspoons of sugar or simple syrup to enhance the flavor.
Step 2:
Add 1 teaspoon of lemon juice to the blender and blend the strawberries into a smooth purée. If you prefer a smoother Bellini, strain the purée through a fine mesh sieve to remove seeds.
Step 3:
Spoon about 2 tablespoons of the purée into a chilled champagne flute.
Step 4:
Slowly top off with cold Prosecco or sparkling wine. Pour gently down the side of the glass to preserve the bubbles and avoid too much foam.

Gently stir once to combine. Garnish with a fresh mint leaf or a sliced strawberry on the rim. Serve immediately while bubbly and bright.
