Strawberry Bellini Recipe

Ingredients

These ingredients come together to form a powerhouse of flavor:

  • 🍓 1 cup fresh strawberries (hulled) – ripe and juicy

  • 🍬 1–2 tsp sugar or simple syrup – optional, for added sweetness

  • 🍋 1 tsp fresh lemon juice – balances the sweetness

  • 🍾 1 bottle chilled Prosecco or sparkling wine – adds the fizz and elegance

  • 🌿 Fresh mint or strawberry slice (for garnish) – optional but lovely

  • ❄️ Ice (optional, for blending) – if you prefer it frozen-style


Instructions

Step 1:
Wash and hull your strawberries. Pat them dry and place them in a blender. If they’re not peak-season sweet, add 1–2 teaspoons of sugar or simple syrup to enhance the flavor.

Step 2:
Add 1 teaspoon of lemon juice to the blender and blend the strawberries into a smooth purée. If you prefer a smoother Bellini, strain the purée through a fine mesh sieve to remove seeds.

Step 3:
Spoon about 2 tablespoons of the purée into a chilled champagne flute.

Step 4:
Slowly top off with cold Prosecco or sparkling wine. Pour gently down the side of the glass to preserve the bubbles and avoid too much foam.

  • Step 5:
    Gently stir once to combine. Garnish with a fresh mint leaf or a sliced strawberry on the rim. Serve immediately while bubbly and bright.

Notes

These Bellinis are incredibly simple, but to elevate them:

  • Use very ripe strawberries for the best natural sweetness.

  • Strain the purée if you want a smooth, seed-free texture.

  • Keep everything cold—chill your flutes and keep the Prosecco refrigerated.

  • Pour the wine slowly to preserve carbonation and prevent overflow.
