These Strawberry Shortcake Drop Biscuits are a delightful combination of tender, flaky texture and sweet, juicy strawberries. Each bite melts in your mouth, offering a creamy richness from the whipped cream that perfectly complements the fresh fruit.

Ingredients

Scale
  • For the Biscuits:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, cold and cubed
    • 3/4 cup buttermilk
  • For the Strawberries:
    • 2 cups fresh strawberries, hulled and sliced
    • 1/4 cup granulated sugar
  • For the Whipped Cream:
    • 1 cup heavy cream
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Pour in the buttermilk and stir until just combined; do not overmix.
  5. Using a spoon or ice cream scoop, drop heaping tablespoons of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the tops are golden brown.
  7. While the biscuits are baking, combine the sliced strawberries and sugar in a bowl and let them sit for about 10 minutes to release their juices.
  8. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Once the biscuits are done, let them cool slightly before serving with strawberries and whipped cream on top.
