Street Corn Deviled Eggs are a delicious twist on the classic deviled eggs, featuring the vibrant flavors of street corn.
Ingredients

- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup corn (fresh or canned)
- 1/4 cup cotija cheese, crumbled
- 1 tablespoon lime juice
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Hard boil the eggs, then cool and peel them.
- Slice the eggs in half and remove the yolks.
- In a bowl, mash the yolks with mayonnaise, Dijon mustard, lime juice, chili powder, salt, and pepper.
- Fold in the corn and cotija cheese.
- Fill the egg whites with the yolk mixture.
- Garnish with chopped cilantro.
Notes
- For extra flavor, grill the corn before adding it to the mixture.
- Adjust the spice level by adding more or less chili powder.
- These can be made a day in advance; just keep them refrigerated.
