Description

Street Corn Deviled Eggs are a delicious twist on the classic deviled eggs, featuring the vibrant flavors of street corn.


Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup corn (fresh or canned)
  • 1/4 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Hard boil the eggs, then cool and peel them.
  2. Slice the eggs in half and remove the yolks.
  3. In a bowl, mash the yolks with mayonnaise, Dijon mustard, lime juice, chili powder, salt, and pepper.
  4. Fold in the corn and cotija cheese.
  5. Fill the egg whites with the yolk mixture.
  6. Garnish with chopped cilantro.

Notes

  • For extra flavor, grill the corn before adding it to the mixture.
  • Adjust the spice level by adding more or less chili powder.
  • These can be made a day in advance; just keep them refrigerated.
