Ingredients

- 16 oz medium-sized baby bella or portobello mushrooms
- 2 tbsp olive oil
- 4 oz cream cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 shallot, diced
- 3 garlic cloves, minced
- Fresh herbs (cilantro, optional)
- Salt and black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking dish with olive oil.
- Clean the mushrooms and remove the stems.
- Toss the mushroom caps with 1 tablespoon of olive oil.
- Sauté shallots and mushroom stems in the remaining olive oil for 3-4 minutes; add garlic and cook for another minute.
- In a mixing bowl, combine sautéed ingredients with cream cheese, egg, breadcrumbs, Parmesan, and cilantro; season with salt and pepper.
- Fill each mushroom cap with the stuffing and place them in the baking dish.
- Bake for 20-25 minutes until golden brown and tender.
- Serve warm.
