Description

Delicious baked mushrooms filled with a creamy and savory stuffing, perfect for any gathering.


Ingredients

  • 16 oz medium-sized baby bella or portobello mushrooms
  • 2 tbsp olive oil
  • 4 oz cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 shallot, diced
  • 3 garlic cloves, minced
  • Fresh herbs (cilantro, optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with olive oil.
  2. Clean the mushrooms and remove the stems.
  3. Toss the mushroom caps with 1 tablespoon of olive oil.
  4. Sauté shallots and mushroom stems in the remaining olive oil for 3-4 minutes; add garlic and cook for another minute.
  5. In a mixing bowl, combine sautéed ingredients with cream cheese, egg, breadcrumbs, Parmesan, and cilantro; season with salt and pepper.
  6. Fill each mushroom cap with the stuffing and place them in the baking dish.
  7. Bake for 20-25 minutes until golden brown and tender.
  8. Serve warm.

Make-ahead tips: Prepare the filling a day in advance. To customize, try swapping cream cheese with ricotta or adding sautéed spinach.
