- 2 medium sweet potatoes
- 1 ripe avocado
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the sweet potatoes into thin rounds.
- Toss the sweet potato slices with olive oil, salt, pepper, and paprika.
- Arrange the slices on a baking sheet in a single layer.
- Bake for 20-25 minutes or until tender and slightly crispy.
- While the sweet potatoes are baking, mash the avocado in a bowl and mix in lime juice, salt, and pepper.
- Once the sweet potato bites are done, remove them from the oven and let them cool slightly.
- Top each sweet potato slice with a dollop of the avocado mixture.
- Garnish with fresh cilantro before serving.
Notes
- For added flavor, consider adding garlic powder to the sweet potato seasoning.
- These bites can be served warm or at room temperature.
